Mike's Okto-BEER-fest Moose Sausage Recipe

Ingredients: |

28 gram Black
Pepper |
|
12 gram Caraway
Seeds |
|
6 gram Mace |
|
12 gram Ginger |
|
4.5 TBSP Marjoram |
|
100 gram Salt |
|
4.5 cup or 2 x
473ml Cans of Beer |
|

These Okto-beer-fest are
another hit for our backwoods boil-ups. They have a lot of flavour especially with a
stout beer such as Guinness added to the mix. These are definitely not your average Oktoberfest
sausages!

Use your favourite beer,
I've used IPA and Stout having great results with both.

Whenever I make my own
sausage spice mix I always thoroughly combine the dry ingredients on
their own in a bowl.

Add the spice mixture to
the ground meat
along with all liquid ingredients then thoroughly combine by hand in a large meat
tote.

Before stuffing into
casings test-fry a sample. At this point you can add more meat or more
seasoning to make sure they taste the way you want them.

There is no binder in this
recipe and I have no trouble with meat coming apart even when making burger
patties from this mixture.
