Mexican Street Corn


Ingredients:

Sauce Ingredients:

1 Tin of Sweet Kernelled Corn

3 TBSP Mayo

1 Fresh Jalapeño Pepper Diced

1 tsp Chili Powder

1 Bell Pepper Diced (1/2 red, 1/2 green)

1 tsp salt
1/2 of a Red Onion (or pickled red onion) Juice of 1/2 a Lime
3 Cloves Garlic Minced  
Fresh Cilantro to taste  

Today I tried out this new recipe to make a simple very refreshing side for any backyard Barbeque. Simply chop the ingredients listed above and combine in a medium sized bowl.

 

 

Next in a separate bowl mix ingredients for the sauce.

 

 

 

Finally, combine everything together and let stand covered in the refrigerator until ready to serve.

 

 

Side note this is fantastic as a side dish, it's even better as a topping for tacos or crunch wraps!
