Newfoundland Grillers Smokers & Boil-Ups Guild Moose Sausage 7-Layer Dinner
I've been making this dish for years and never put a name on it until now just so I could share this delicious feed! I start by peeling and chunking up potato and put them on to boil to make mashed potato. Next I begin dicing and frying up 2 large onion, then add chunked up moose sausages (6-8 or one full pack). While that's cooking I combine in a bowl the tomato soup, the one can of water the soup calls for, the tin of diced tomatoes, garlic, Worchester sauce, corn and carrots/peas. When the onions are browned and sausage cooked I add the mixture and simmer on medium heat while the potatoes are boiling. Add sugar to taste, usually 1-2 TBSP
I plate mine by laying down a layer of mashed potato topped with the Sausage/Sauce mix usually adding black pepper to taste.
