Loaded Baked Potato Soup


Ingredients: Soup Stock:

3-Large Potato*

1/3 Cup Butter

6-Slices of Bacon

1/3 Cup Flour
1/4 Cup Finely Chopped Onion 2-1/2 Cup Milk

1-Large Clove of Garlic (minced)

1/2 Cup Cream
  2 Cup Chicken Broth 
  Salt to taste
  1/2-tsp Black Pepper
  2 Cup Shredded Cheddar Cheese

*Note: The base of this soup is incredible both as listed above and while substituting other ingredients for the potato. I have substituted potato for broccoli & cauliflower; cooked chicken breast; and with my favourite seafood's to make a delicious chowder.


To make Loaded Baked Potato soup first clean the three large potato and bake them in the oven or microwave oven. Next fry up the bacon and onion.

 

 

To make the soup base: Melt the butter in a soup pot, next add the minced garlic cook for a minute, then add flour stirring constantly for about minutes to cook the flour. Next add the milk, cream, chicken broth and black pepper, simmer 8-10 minutes and it will thicken beautifully.

 

 

When thickened and bubbling, add the cheese & crumbled strips of cooked bacon.

To turn this into loaded potato soup, all that's left to do is remove skins from baked potato, cube, add to the soup and simmer. You can garnish with additional crumbled bacon & chives.

 

 

At this point you can also substitute the potato for steamed broccoli, cauliflower, cooked chicken, cooked seafood and more! It has been a fantastic hearty soup in every configuration I've made to date.
